Sausage Traybake Recipe

The perfect lightweight recipe for summer evenings, this sausage tray-bake recipe only takes 10 minutes to prepare before cooking in the oven for 40-50 mins!

Here’s all you need:

  • 1 bag of baby potatoes (you could add sweet potatoes, instead for a lower-calorie option)

  • 8 pork sausages (we use our very own outdoor reared lincolnshire sausages!)

  • 1 lime

  • 2 tbsp sesame or vegetable oil

  • 1 tbsp white wine vinegar

  • 10g fresh coriander

  • 2 peppers

  • 1 red onion


  • Preheat your oven to 180-200 degrees

  • Halve your potatoes and toss in oil

  • Put chopped potatoes and sausages in large, shallow oven tray and bake for 20 minutes

  • Chop up the peppers and onions into long strips, and slice coriander finely. Set aside.

  • Once the potatoes and sausages have cooked for 20 minutes, add the peppers, onion, coriander, lime and vinegar to the tray

  • Add in more oil or extra seasoning as you see fit!

  • Leave to cook for another 30-40 minutes or until browned.
