Sausage Traybake Recipe
The perfect lightweight recipe for summer evenings, this sausage tray-bake recipe only takes 10 minutes to prepare before cooking in the oven for 40-50 mins!
Here’s all you need:
1 bag of baby potatoes (you could add sweet potatoes, instead for a lower-calorie option)
8 pork sausages (we use our very own outdoor reared lincolnshire sausages!)
1 lime
2 tbsp sesame or vegetable oil
1 tbsp white wine vinegar
10g fresh coriander
2 peppers
1 red onion
Instructions:
Preheat your oven to 180-200 degrees
Halve your potatoes and toss in oil
Put chopped potatoes and sausages in large, shallow oven tray and bake for 20 minutes
Chop up the peppers and onions into long strips, and slice coriander finely. Set aside.
Once the potatoes and sausages have cooked for 20 minutes, add the peppers, onion, coriander, lime and vinegar to the tray
Add in more oil or extra seasoning as you see fit!
Leave to cook for another 30-40 minutes or until browned.
