Autumnal Beef Casserole and Dumplings Recipe
A simple autumnal recipe, try out this beef casserole recipe to serve up to your family in these colder months.
Ingredients:
- Diced, grass-fed beef
- 25g plain flour
- 2 tbsp olive oil
- x1 500g stewing veg (we would recommend carrots, potatoes, onions, swede and celery)
- 450ml beef stock
- 300ml red wine
- 2 tsp mixed herbs (or fresh rosemary, thyme, oregano and garlic)
- x1 180g pack of dumpling mix
Method:
1. In a bowl, add the diced beef and coat with flour.
2. Preheat the oven to to 150 degrees (fan) or 170 degrees.
3. In a frying pan, add oil and heat on a high temperature. Add beef in batches for 4-5 minutes or until brown. Then, once done, transfer into a casserole dish with a lid.
4. Add vegetables, wine, stock and herbs into the casserole dish. Cover with lid and cook in the oven for 2 - 2 1/2 hours.
5. Whilst this is cooking, prepare dumplings according to packet instructions. Shape evenly into about 8 balls.
6. Around 20 minutes before the casserole is due to have finished cooking, add the dumplings and leave the dish without its lid to continue cooking.
Serve with creamy mash, bread or extra vegetables. Enjoy!
