Beef Stifado Recipe
This recipe is definitely a one pot wonder!
Great for the slow cooker and hardly took any time to prep.
Its a new recipe I have never tries before, it was my sister in law who told me about it and I am so glad I did because this meal is tasty. We all love it, even the boys.
Here is the recipe and the super easy method.
Ingredients
Olive Oil
1kg diced beef. Shin or braising steak works well too.
3 red onion chopped
pinch of caster sugar
4 garlic cloves
1 cinnamon stick or I did just use a sprinkle of cinnamon powder as that is all I had in the cupboard.
pinch of all spice or ground cloves
1 tbsp tomato puree
1 tbsp red wine vinegar
2 x 400g chopped tomato
150ml red wine
A couple of chopped carrots too.
pinch of dried herbs
Method
Brown all beef. I actually use my slow cooker to brown the meat. I turn on to high and let it do its thing. Its great because you dont lose out on all of those wonderful juicy meaty bits. You can use oil to brown the beef in a frying pan if you would prefer.
If browning in the slow cooker leave the beef in, if you are browning in a pan take the beef out with a slotted spoon and leave until needed.
Add a little oil to the pan and the chopped onions & carrots, then scatter the sugar on top.
Sizzle for 5 mins, stirring now and then until starting to brown. Add garlic, cinnamon, allspice, cloves and dried herbs and cook for 1 min.
Stir in the tomato puree and cook for another min, then tip into the beef and stir or add the beef back to the pan and coat if not in slow cooker.
Add the red wine vinegar, chopped tomatoes. Rinse the cans out with the red wine and pour it in, then add a third of a can of water.
Season well with salt & pepper.
Slow cook on low for 6-8 hours.
Serve with rice, naan bread, pitta breads, salad, sour cream the list is endless.
This super easy Greek dish is great for a midweek meal for the whole family.
I am also going to try this dish with Hogget, it will be just as good if not better
