How To Make Sourdough Bread At Home
I was lucky enough that a friend gave me a Sourdough Starter, but when making it yourself all you need is 30g Spelt Flour and 30g of room temp water and patience. This process of fermentation can take 7 days.
Ingredient's needed for one large loaf are -
- 500g Plain Flour
- 280ml Room Temp Water
- 5g salt
- 150g Sourdough Starter
Mix all ingredients together in a bowl then tip out on to a floured surface and knead for 10 mins. The dough will be sticky but not overly.
Dough back in bowl with a damp cloth over it and left in the oven (with no heat) but with the light on.
Leave it in the oven for an hour or two.
Bring out of the oven and stretch and fold four times every half an hour, 3 - 4 times.
Dough back in the bowl, sprinkle a little flour and pop it back in the oven, covered with a damp cloth and leave it over night. ( No light or heat in the oven)
In the morning put the dough on the kitchen side and preheat the oven with a pan, big enough to go over the dough.
While preheating tip your dough on to a floured baking tray and tuck in under itself slightly, to give it a bit more height, then slice the dough however you like with a sharpe knife.
Take your hot pan and place over the dough and bake for 20 mins at 240, remove the pan and bake for a further 20 minutes.
If you feel the colour is building more than you would like turn down the temperature.
For best results pre heat your baking tray, this can be tricky to do without getting burnt and keeping its shape.
