Spicy Sausage Pasta Recipe


Looking for dinner inspiration? Well then, this dish is just for you. 


Taking just 20 minutes to cook and super delicious to taste, this recipe can be varied to your own preferences on spice, size and ingredients. The below ingredients feed 4 but just scale up for more!


Ingredients:

  • 1 pack of sausages
  • 450g penne pasta
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 4 cloves garlic, minced
  • 4 large tomatoes, diced
  • 2 squirts of tomato paste
  • 125ml vegetable or chicken broth
  • Chilli flakes (to taste)
  • Italian seasoning (to taste)
  • Crushed fennel seed(to taste)
  • Salt and pepper (to taste)
  • 1 spring onion, sliced (for garnish)
  • Fresh basil (for garnish)


Directions:

1. Cook pasta according to package directions, until al dente, then drain and set aside.

2. Heat a splash of oil in a large frying pan over medium heat. Add sausages and cook until browned on all sides. Once done, set aside on a chopping board. 

3. In the same frying pan, add some extra oil (if needed) and fry onions with fennel seeds, chilli flakes and Italian seasoning. Then, add the garlic, tomato paste and fry for 2-3 minutes. 

4. Add bell pepper and tomatoes and continue frying for 5 minutes. Then, add veg/chicken stock with a splash of water and cook for another minute or so. If you'd like to make it more saucy, add more water and tomato paste. Season to taste with salt and pepper, and add more chilli flakes or Italian seasing if you like a kick!

5. Slice sausages and add back to the frying pan. Cook for 5 to 10 minutes, until sausage is cooked through and sauce is thickened.

6. Add pasta to the frying pan and reheat for 1-2 minutes, stirring to coat the pasta with the sauce. Garnish with basil, spring onion, and parmesan cheese.
