Wild Garlic Pesto Recipe

Foraging I love it!

And when you find something growing naturally that tastes so good, you have to give it a try.

The Ingredients I used were - 

  • 150g of Wild Garlic
  • 50g Pine Nuts
  • 150ml Olive Oil
  • 50g Parmesan
  • 1/2 lemon
  • 1 Garlic Clove
  • Linguine (as much as you like)

I whizzed all of the ingredients together apart from the olive oil. I added salt & pepper as it whizzed around.

Once the ingredients where at a  paste like consistency I then added the oil, leaving a small amount behind for later.

Once everything has come together serve with warm pasta of your liking, I used Linguine and it is super tasty.

The great thing about making this Pesto is the recipe will make you 500g of Pesto, you can keep it in the fridge for up two weeks and you can also freeze it.

Here's how - 

  • Add your Pesto to ice cube trays 
  • Add a tiny amount of Olive Oil to each cube
  • Place in freezer.
  • Once frozen remove from freezer and place cubes in a freezer bag and place back in freezer 
  • When ready to use again defrost - the cubes defrost super fast.
  • Enjoy

No waste and still a great flavour.
